Chef Saif Rahman will be heading up the concept alongside artist Patrick Shanahan, who is leading design on the project, according to a release obtained by What Now Charlotte.
The menu will have a variety of culinary influences, inspired by Rahman’s experiences.
“A love letter to Rahman’s life traversing the globe, the menu will draw inspiration from Rahman’s childhood home in South Asia, to his new home in North Carolina,” the release states.
The menu will have influences from South Asian cuisine, his culinary education in France, his childhood culinary experiences while growing up in Queens and his experiences in North Carolina. Menu highlights will include Bengali fish curry and crispy lentil fritters.
“I’m honored to share the food that has made me who I am today, that tells my life story — an American story. Cuisines from all corners of the world share so much in common, and that’s what we’re going to explore, with respect and refinement,” Rahman said in the release.
Both Rahman and Shanahan have hospitality experience in the area. Rahman was a chef at Mediterranean restaurant Vidrio, and Shanahan is a co-owner of Raleigh bar Watts & Ward.
Though an exact opening timeline has yet to be released, Peregrine is expected to open in winter 2025.
