The Salted Melon Market & Eatery is targeting SouthPark for its third location, following a holiday pop-up at Phillips Place. It has plans to open at 6809 Phillips Place Court, Suite A, in late spring, according to a recent Instagram announcement.

Owner Thomas Coker and his team expect construction to begin in February on the 2,769-square-foot space, according to the Charlotte Business Journal.
“Get ready to experience Salted Melon’s delicious offerings at their newest Charlotte location right here in Phillips Place. Salted Melon will serve its well-known espresso bar and breakfast menu, and its elevated counter service featuring the all-day menu of salads, bowls, sandwiches, wraps, smoothies and more,” the Instagram announcement stated. “They will also carry a curated selection of gourmet market items and specialty goods.”
The Salted Melon opened in 2022 in South End and added another location in Eastover in 2024. The counter-service menu includes breakfast items like avocado toast and breakfast burritos; sandwiches and wraps like the Perfect Pesto Caprese and the Turkey Prosciutto Panini; bowls like Freebird and Pesto Harvest; and salads like the Artisan Kale Caesar. There are also grab-and-go items.
In a previous interview with What Now Charlotte, Coker shared that he hopes to open multiple units over the next few years.
