The company’s second site is set to move into the former home of The Underground Sandwich Shop in the basement of the Merit Building, according to the restaurant’s social media. Before that, the site was home to several businesses, including Howard’z Sandwich Shop, Rico’s Acai, De Coria’s Bagel Shop, and more. There is no exact timeline for this location, but the company began to look for new hires a couple of weeks ago. The company initially hoped to open this month.

“We want to open as bad as you guys are ready to support, but we’re trying to be fully staffed at our current location before opening new doors!” according to a comment made by the company on social media a week ago. “We want to promise the community we will be there when you show up.”

The new location proves impressive for owner Luis Baeza, who started the business seven years ago and has since launched a food truck and soon a second location, which will have a speakeasy feel. When the new site opens, customers can expect a slightly different vibe and menu than the original location, with a few menu favorites still available. Some new menu items include year-round soup and more salads, wraps, and paninis. The new Tex-Mex Back Road Grill will also serve homemade agua frescas, coffee, soda, and its famous sweet tea.
